Cauliflower “Fried” Rice
Ingredients
  • 1 head cauliflower
  • subheading: Sauce:
  • 3 Tbsps organic tamari (reduced-sodium, or coconut aminos)
  • ¼ cup water
  • 2 tsps sesame seed oil (optional)
  • 1 Tbsp maple syrup (or date paste, link in Chef’s Notes)
  • 1 Tbsp sherry vinegar (or red wine vinegar)
  • 1 Tbsp fresh ginger (grated)
  • 1 Tbsp fresh garlic (minced)
  • subheading: Veggies:
  • 1 cup onion (yellow or white, diced)
  • 2 cups broccoli florets (chopped into ½” pieces)
  • 1 cup carrots (diced)
  • ½ cup green peas (frozen or fresh)
  • ½ cup organic corn (frozen or fresh)
  • ½ cup pineapple (chopped)
  • 2 to 3 green onions (green and white portions, sliced)
  • ¼ to ½ cup cilantro (optional, chopped)
  • 2 Tbsps sesame seeds
  • crushed red pepper (optional, to taste)
