This salad )adapted from the original) is made with fresh salad greens, roasted beets, juicy orange segments, salty pistachios, and red onion. It is generously tossed in a light citrus dressing that really brightens the salad.
Ingredients
  • subheading: Salad:
  • 3 med. beets (scrubbed well)
  • Kosher salt and black pepper, to taste
  • 6 cups arugula or mixed greens
  • 2 oranges, thinly sliced & cut into segments
  • ¼ cup red onion, thinly sliced
  • ½ cup pistachios or walnuts
  •  
  • subheading: Dressing:
  • 2 Tbsp. fresh orange juice
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. white balsamic or champagne vinegar
  • 2 tsp honey
  • ½ tsp Dijon mustard
  • 1 Tbsp. ground chia seed
  • Sea salt and black pepper, to taste
