Vegan Vaquero Chili
Ingredients
  • 8 ounces dried Vaquero beans, soaked overnight (may substitute dried pinto beans)
  • 1 14.5 oz can diced fire-roasted tomatoes
  • 1 to 2 chipotles in adobo, sliced
  • ½ medium onion, finely diced
  • ½ bell pepper, finely diced
  • 1 carrot, finely diced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper
  • 5 cups water
  • salt to taste
  • 1 ounce dark chocolate
