Squash Couscous (or steamed rice)
Ingredients
  • 4 cups vegetable stock
  • 1 spanish onion thinly sliced
  • 1 teaspoon ground ginger
  • ½ teaspoon each of salt and pepper
  • ½ teaspoon turmeric
  • ½ cup sultana raisin
  • ¼ cup granulated sugar
  • ¼ cup butter
  • 4 cups couscous ( or steamed rice)
  • 1 ½ lb butternut squash
  • 2 zucchinis
  • 2 cups chickpeas peeled if desired
  • 2 tablespoons chopped fresh parsley
