One Pot Vegan Chicken Noodle Soup
Ingredients

  • 2 cloves garlic minced
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper plus more to taste
  • 1 large sprig fresh thyme or ½ tsp dried
  • 3 to 4 small gold potatoes diced
  • 4 ounces dry rotini gluten-free or regular
  • 2 ounces dry soy curls*
  • 5 cups vegan (imitation) chicken-flavored broth
  • 4 cups water
  • 2 tablespoons chopped parsley
  • salt to taste
