Flan Cake

I am a medically retired RN after spinal fusion and open heart surgeries within two years of each other. After the heart, it was evident that a life style change was needed. My wife and I started following the keto diet, and we have both lost a noticeable amount of weight. Take care of yourself. No one else will do it for you.

10 Tablespoons butter, plus more for greasing the pan

1 cup sugar

1 egg

2 cups all-purpose flour, plus more for dusting the pan

2 Tablespoons cornstarch

¾ teaspoon baking powder

¾ teaspoon baking soda

1¼ cups whole milk

subheading: for the flan layer:

1 12-oz can evaporated milk

1 14-oz can sweetened condensed milk

4 eggs

1 teaspoon vanilla

sweetened whipped cream for serving
