Griddled Campechano Tacos - Rick Bayless
Ingredients
  • ¾ pound Mexican Beef Cecina or Bistec (always available in Mexican groceries; in American groceries, look for thin-sliced sandwich steaks)
  • salt
  • 2 tbsp fresh-rendered pork lard or vegetable oil , plus a little more if needed
  • ½ pound chorizo or longaniza , casing removed
  • 1 small white onion (4 oz) , cut into small pieces
  • 2 medium (8 oz total) boiling potatoes (like golds or the red-skin ones) , grated through the large holes of a box grater
  • 1 tsp ground black pepper
  • 1 tsp oregano (preferably Mexican oregano)
  • ½ tsp ground cumin
  • About 12 corn tortillas
  • 1 oz crisp chicharrón , chopped or crumbled into small pieces (you'll have about a generous cup) (optional)
  • About 1 ½ cups Avocado-Tomatillo Salsa
