These were delicious!! Used sweet chili chicken tenders with store bought hummus, olive dip and harrisa with vege. Super yum!!!
Ingredients
  • 3 boneless skinless chicken breasts 500 g
  • subheading: For Mediterranean chicken marinade:
  • ¼ cup Greek Yogurt (Any thick yogurt or curd)
  • 1 tsp finely chopped or minced garlic
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp paprika (skip if you do not like spicy)
  • ½ tsp ground black pepper
  • salt to taste
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • subheading: For Hummus:
  • ¼ cup tahini (substitute - lightly roasted sesame seeds 3 tbsp)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 cup cooked chickpeas rinsed and drained
  • ½ tsp ground cumin
  • 1 clove garlic roughly chopped
  • salt to taste
  • subheading: For Mediterranean Salad:
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • salt to taste
  • ½ tsp ground black pepper
  • 3 tbsp finely chopped parsley basil or dill leaves
  • 1 tsp finely chopped or minced garlic
  • ½ cup tomatoes (plum or cherry tomatoes)
  • 1 cucumber deseeded & chopped
  • ½ red onions diced
  • ¼ cup feta cheese (or any cheese of your choice)
  • subheading: For Mediterranean Chicken Wraps:
  • 6 Tortillas or Flatbread (big size or large)
  • Lettuce leaves optional
