Raspberry Chicken

Ingredients
  • 4 large skinless chicken breasts
  • Salt, to taste
  • 4 Tablespoons of butter
  • ½ Cup finely chopped onion
  • 4 Tablespoons raspberry jelly
  • 6 Tablespoons of white vinegar
  • 2 Tablespoons of brown sugar
  • ½ Cup heavy cream
Steps
  1. Cut the four chicken breasts in half lengthwise
  2. Lightly salt chicken pieces to taste
  3. Melt butter in skillet
  4. Add chicken to skillet, cook over medium heat 5 minutes. Turn chicken
  5. Add onion around edges of skillet. Cook 5 to 10 minutes or until chicken is done
  6. Transfer chicken to a platter, keep warm
  7. Add jelly, vinegar and brown sugar to mixture remaining in skillet. Cook over high heat, scraping up bits in the pan.
  8. Bring to a boil and boil for one minute or until sauce is slightly reduced.
  9. Let cool slightly and stir in cream.
  10. Heat just to boiling.
  11. Pour over chicken. Serve immediately.
