Filipino Lomi Soup (Pancit Lomi)
Ingredients
  • 3 ½ to 4 c pork or chicken broth (homemade of store bought)
  • Lomi noodles (1 package)
  • Squid or fish balls (¼ package) *Optional if you do not have these or do not want to add
  • Crispy fried pork with skin, cubed (from about ¼ lb or 100g pork belly)
  • 1 medium onion, chopped
  • 2 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 2 tbsp cornstarch + ⅛ c water
  • 2 eggs (beaten)
  • 2 tablespoon oil for frying, (Extra Virgin Olive Oil, canola or vegetable oil)
  • Shredded cabbage, about a cup
  • Fish sauce to taste (optional)
  • Salt and pepper to taste
  • Optional toppings: hard boiled eggs, green onions, cilantro, pork rinds
