Spicy Fried Chicken Strips
Ingredients
  • 1 cup Franks Red Hot Sauce
  • 2 eggs
  • Daves insanity sauce to taste (optional)
  • Vegetable oil
  •  
  • 2 cups all purpose flour
  • 3 to 5 tablespoons House seasoning
  • Chicken strips
  •  
  • note: House seasoning:*
  • 1 cup salt (I prefer kosher)
  • ¼ cup black pepper
  • ¼ cup garlic powder
Steps
  1. Mix house seasoning ingredients together and store in an airtight container for up to 6 months.
  2. season chicken liberally with house seasoning on both sides
  3. preheat oil to 350 in a heavy skillet (to a level sufficient to cover chicken halfway)
  4. mix eggs and franks (daves optional for extra heat and flavor; I use about a tablespoon; much of the actual heat will cook out) in a bowl
  5. mix flour with ~2 tablespoons of the house seasoning mixture
  6. dip chicken into wet mixture then dry mixture in batches
  7. shake as much flour off strips as possible, and drop into preheated oil flipping chicken after breading is sufficiently browned
  8. remove chicken and lay on a cooling rack or plate and paper towel, salting immediately upon removal, then allow to cool several minutes
  9. serve with a side of spicy ranch and extra franks hot sauce for dipping
