Chicken and Sausage Gumbo
Ingredients
  • 2 pounds boneless, skinless chicken thighs, cut into quarter size pieces

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon celery salt
  • 1 ½ cups flour
  • 2 ½ cups vegetable oil
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 1 cup finely chopped green pepper
  • 8 cups chicken broth
  • 1 ¾ cups chopped or thinly sliced smoked pork sausage, such as andouille
  • 2 bay leaves
  • 2 cups cooked rice or potato salad, for serving
  • 2 teaspoons file powder (optional)
  • 1 bunch scallions, thinly sliced
