Curried Orange Lentil soup with Spinach
2 med onions diced
2 med carrots diced
2 tbsp olive oil
1 1/2 cups red lentils
1/2 tsp coriander powder
6 cups water
1/2 celery root diced with leaves  
2 cloves chopped garlic
1 1/2 tbsp red curry paste
1 can coconut milk
2 cups spinach
salt and pepper

Servings: 1. fry onion till translucent, add carrots, then lentils. 2. add coriander salt pepper, celery root and garlic.....add water 3. allow the mixture to cook for ½ hour, add curry paste, stirring until well blended. 4. chech salt and pepper, add the coconut milk, cook further for 5 minutes, then throw in ½ the spinach. Continue cooking 5 more minutes... turn flame off. 5. add the rest of the spinach before serving..cook for two more minutes.
