Jim found this recipe a number of years ago from Cooks Country.

Ingredients
- 12 to 16 frozen waffles
- 24 oz maple breakfast sausages
- 12 oz shredded cheddar cheese
- 12 large eggs
- 2½ cups whole milk
- ½ cup maple syrup
- ½ t. salt
- ¼ t. black pepper
Steps
- Preheat oven to 375°
- Lay waffles on cookie sheet and bake until crisp (about 10 mins per side)
- Brown, crumble, and drain sausage
- Grease a 9x13 casserole dish and add ½ of the waffles in a single layer
- Top with ½ of the sausage and ½ cup of the cheese
- Layer the remaining waffles, sausage and ½ cup of cheese
- Whisk eggs, milk, maple syrup, salt, and pepper in a bowl and pour egg mixture evenly over casserole
- Cover with plastic wrap and compress the mixture (overnight) with a weighted dish or pan
- Refrigerate overnight
- Preheat oven to 325°
- Remove wrap and weight(s) and bring to room temperature for 20 minutes
- Add remaining cheese and bake until puffy (75 to 90 minutes)
Notes
- The recipe can easily be cut in half to serve 6.
