Maple Sausage and Waffle Casserole

Ingredients
  • 12 to 16 frozen waffles
  • 24 oz maple breakfast sausages
  • 12 oz shredded cheddar cheese
  • 12 large eggs
  • 2½ cups whole milk
  • ½ cup maple syrup
  • ½ t. salt
  • ¼ t. black pepper
Steps
  1. Preheat oven to 375°
  2. Lay waffles on cookie sheet and bake until crisp (about 10 mins per side)
  3. Brown, crumble, and drain sausage
  4. Grease a 9x13 casserole dish and add ½ of the waffles in a single layer
  5. Top with ½ of the sausage and ½ cup of the cheese
  6. Layer the remaining waffles, sausage and ½ cup of cheese
  7. Whisk eggs, milk, maple syrup, salt, and pepper in a bowl and pour egg mixture evenly over casserole
  8. Cover with plastic wrap and compress the mixture (overnight) with a weighted dish or pan
  9. Refrigerate overnight
  10. Preheat oven to 325°
  11. Remove wrap and weight(s) and bring to room temperature for 20 minutes
  12. Add remaining cheese and bake until puffy (75 to 90 minutes)
Notes
  • The recipe can easily be cut in half to serve 6.
