Ingredients
  • 2 peeled and cored  small to medium apples, diced into ½" pieces
  • ½ large white onion diced
  • 3 stalks of celery diced
  • ⅓ large red or yellow bell pepper diced small
  • 2 cups chopped fresh spinach
  • 3 cups chopped fresh mushrooms
  • 1 tsp dried basil
  • ½ to 1 tsp dried sage
  • ½ to 1 tsp poultry seasoning
  • Salt and Pepper to taste
  • ½ cup chopped walnuts
  • 1 large loaf of your favorite bread, cut in small 1" cubes (shown is a mix of white, wheat and pumpernickel) baked in oven until dry and crunchy, or 3 cups of prepared stuffing croutons.
