(4) Coated Broccoli Cheddar Stuffed Chicken

Ingredients

  • 2 small chicken breast
  • ½ cup broccoli*, chopped
  • ¼ cup shredded cheddar cheese
  • 1 ounce cream cheese, softened
  • 1 ounce shredded, mozzarella cheese
  • 1 teaspoons cajun seasoning
  • 1 egg beaten
  • ½ cup pork rinds
Steps
  1. Preheat the oven to 400 degrees F

  3. In a small bowl combine the broccoli, cheddar cheese, mozzarella and softened cream cheese, set aside
  4. subheading: How to cut a chicken for stuffing:
  5. For each chicken, place one hand on top of chicken to keep it steady. Insert a sharp knife in the middle of the thickest part. Make a slit about 5cm long. Run the knife into the breast until it's three-quarters of the way through.
  6. Spread the broccoli cheese mixture on one side of the chicken and roll it over, you can secure with a toothpick.
  7. subheading: How to prepare the coat:
  8. Beat egg, add cajun seasoning
  9. Dip the chicken in the egg wash and then finally coating it with crushed pork rinds
  10. Place in a greased baking dish. Bake 25 to 30 minutes until the chicken is cooked through.
