Ingredients

- 2 small chicken breast
- ½ cup broccoli*, chopped
- ¼ cup shredded cheddar cheese
- 1 ounce cream cheese, softened
- 1 ounce shredded, mozzarella cheese
- 1 teaspoons cajun seasoning
- 1 egg beaten
- ½ cup pork rinds
Steps
- Preheat the oven to 400 degrees F

- In a small bowl combine the broccoli, cheddar cheese, mozzarella and softened cream cheese, set aside
- subheading: How to cut a chicken for stuffing:
- For each chicken, place one hand on top of chicken to keep it steady. Insert a sharp knife in the middle of the thickest part. Make a slit about 5cm long. Run the knife into the breast until it's three-quarters of the way through.
- Spread the broccoli cheese mixture on one side of the chicken and roll it over, you can secure with a toothpick.

- Beat egg, add cajun seasoning
- Dip the chicken in the egg wash and then finally coating it with crushed pork rinds
- Place in a greased baking dish. Bake 25 to 30 minutes until the chicken is cooked through.
