Soft Chocolate Brownie Cookies
Ingredients
  • 4 ounces bittersweet chocolate, chopped
  • 8 tablespoons (112 g) unsalted butter, chopped
  • 2 tablespoons (42 g) unsulphured molasses
  • 1 egg (50 g, weighed out of shell) at room temperature, beaten
  • ⅔ cup (145 g) packed light brown sugar
  • 1 ¼ cups (175 g) all-purpose gluten-free flour (I like Batter Batter here)
  • ½ teaspoon xanthan gum (omit if your blend already contains it)
  • 2 tablespoons (10 g) unsweetened cocoa powder (natural or Dutch-processed)
  • ½ teaspoon kosher salt
  • ¼ teaspoon baking soda
