Grilled Vegetables with Chickpea Pilaf
Ingredients

  • 1 (15 oz) can chickpeas or garbanzo beans, drained and rinsed

  • 4 medium carrots, halved lengthwise
  • 3 T olive oil
  • ½ tsp salt
  • ¼ tsp cumin
  • ¼ tsp pepper
  • 2 medium zucchini, cut lengthwise into 4 slices
  • 2 medium yellow squash, cut lengthwise into 4 slices
  • 1 large yellow bell pepper, quartered lengthwise
  • 1 large onion, cut into ½ inch thick slices
