Keto Pizza Crust - Cauliflower

Servings: 1 pizza, 4 or 6 slices

Ingredients
  • 1 head cauliflower, riced or 1 lb pre-riced cauliflower
  • 1 large egg
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded parmesan cheese
  • Spices to complement toppings
Steps
  1. Preheat oven to 450 degrees.
  2. To rice cauliflower, place florets in a food processor and pulse. Some lumps are ok.
  3. Microwave cauliflower "rice" for 3 to 4 minutes.
  4. Place the hot cauliflower in a dish towel and squeeze out all of the water.
  5. Place the dry cauliflower in a mixing bowl.
  6. Add mozzarella and Parmesan cheese to the cauliflower.
  7. Lightly mix.
  8. Add the egg and continue to mix until loosely combined.
  9. Once it starts to stay together, use your hands to knead the dough.
  10. Place dough on parchment paper covered pizza pan and form the shape you want.
  11. Bake at 450 degrees for 8 to 11 minutes.
  12. Remove from oven, add desired toppings and bake for an additional 5 to 7 minutes.
