Marian’s Spanish Rice
Ingredients
  • 1 cup rice
  • 1 28 ounce can of diced tomatoes
  • 1 ½ pounds of ground beef (80/20)
  • 1 onion diced
  • 1 bell pepper sliced or diced depending on preference
  • Salt to taste
  • Pepper to test
  • 1 to 2 tsp sugar
  • note: Tomato juice or water to keep rice moist.   See step 4.
Steps
  1. Preheat oven to 350°
  2. Brown ground beef. Do not just sauté, the secret is to brown the beef until it turns really dark and starts to get crispy.
  3. Add the rest of the ingredients and bake for 1 to 1½ hours.
  4. If rice starts to get too dry, add tomato juice or water to keep it moist.
Notes
  • If you love stuffed bell peppers, you will love this recipe.
