Ingredients
  • subheading: Rice:
  • 1 cup uncooked white rice
  • 1 tsp. Salt
  • 2 cups water
  • subheading: Meat:
  • 1 lb ground beef
  • 1 cup onions; diced (optional)
  • 1 package taco seasoning mix
  • 1 16-oz can diced tomatoes (use Rotel to kick it up)
  • 2 cups cheddar cheese; shredded, plus extra
  • subheading: Toppings:
  • 1 Salsa; optional
  • 1 shredded lettuce; optional
  • 1 sour cream; optional
  • 1 cheddar cheese; optional
Steps
  1. Cook rice in salt and water and set aside.
  2. Brown meat and drain.
  3. Combine meat, onion, taco seasoning packet and tomatoes in saucepan.
  4. Simmer until thick - about 30 minutes.
  5. Put cooked rice at the bottom of a 8x8 casserole dish. Layer meat mixture
  6. on top. Layer cheese on top of that.
  7. Cook in 350 oven for 10 min or until cheese is melted.
  8. Optional: Serve with salsa, shredded lettuce, sour cream and extra cheese
  9. on side
Notes
  • CM: I leave Rotel and onion out because my son will not eat it if there is onion....but it is so good with it.
  • Also, some use 1 can tomato soup instead of diced tomatoes or Rotel.
