Low carb peanut butter cookies

Ingredients
  • ¼ cup Skippy peanut butter (I tried natural pb, but the cookies fell apart)
  • 3 tablespoons Monk Fruit Sweetener
  • 1 tablespoon beaten egg
Steps

  4. 1 tablespoon beaten egg
  5. Roll into 4 balls and criss-cross with a fork. Bake at 350 for 20 minutes. Optional: once cookies are slightly cooled, melt a small square of 86% dark Ghirardelli chocolate and drizzle over cookies.
