Ingredients

  • One pound (2 ⅔ cups chopped) Belcolade bittersweet discs or Guittard bittersweet chocolate Onyx wafers (50 to 80% cocoa)
  • ¾ cup unsalted butter or margarine
  • ⅔ cup water
  • 1 ⅓ cups sugar
  • ½ teaspoon salt*
  • 7 large eggs
  • ¼ cup liqueur, flavor of your choice; optional
  • note: Omit the salt if you use salted butter or margarine.
