Mini Molten Lava Cakes

Ingredients
  • 1 cup of semi sweet chips
  • 1 stick of butter
  • Combine to smooth and set aside.

  • subheading: In mixer:
  • Whip 3 eggs until very thick and pale.
  •  
  • Slowly add
  • 1 tsp salt
  • ⅓ cup sugar
  • ⅓ cup flour
Steps
  1. 1 cup of semi sweet chips
  2. 1 stick of butter
  3. Combine to smooth and set aside.
  4. subheading: In mixer:
  5. Whip 3 eggs until very thick and pale.
  6. Slowly add
  7. 1 tsp salt
  8. ⅓ cup sugar
  9. ⅓ cup flour
  10. Beat until very thick, add chocolate mixture and fold quickly.  Divide between buttered ramekins or small dishes.
  11. PRESSURE COOK, on HIGH
  12. over 2 cups of water and a trivet for TEN minutes, quick release
  13. Increase the time if you're cooking from fridge or from frozen.
  14. Quick, simple, delicious.  Not too sweet yet desperately chocolatey.
