zucchini squash casserole
Ingredients
  • 2 tablespoons of butter
  • ½ to whole onion thinly sliced
  • 1 zucchini sliced into ⅛  to ¼ inch thickness
  • 1 yellow squash sliced into ⅛ to ¼ inch thickness
  • 2 large cloves of garlic, minced.
  • ½ cup of heavy cream
  • ¼ cup of parmesan
  • ½ cup of any cheese of your choice.  Smoked cheeses are out of this world good :)
  • ½ cup ricotta
Steps
  1. Preheat oven to 450
  2. Melt butter in oven proof skillet or pan, oven over medium heat.  Add onion and cook until edges start to turn medium brown....about 5 minutes.  Add garlic and cook another minute.  Add cream and simmer until starting to bubble and thicken.    Slowly stir in  parmesan.  Add zucchini and squash.  Cook an additional 4 to 5 minutes.  Sprinkle with your cheese and bake in the oven for around 15 to 20 minutes, or until cheese is golden brown.  Enjoy!   :)
