S'Mores Sandwich Cookies
These tender, chewy sandwich cookies take the defining flavors of s’mores and turn them into a playful treat that is infinitely easier to eat than its namesake. In the place of crunchy, unyielding graham crackers are plush sugar cookies made with equal parts crushed graham crackers and flour. Squished between them are a toasted marshmallow crème and generous dab of unctuous bittersweet chocolate ganache. Each cookie captures the ideal balance of flavor and texture that actual s’mores rarely do, no campfire required.

  • 1¾ cups (219 g) all-purpose flour
  • 2 tsp. baking soda

  • 1 cup (packed; 200 g) light brown sugar
  • ¾ cup (1½ sticks) unsalted butter, room temperature
  • 3 Tbsp. mild-flavored (light) molasses
  • 1 Tbsp. vanilla bean paste or vanilla extract
  • 1 large egg, room temperature

  • 1½ cups bittersweet chocolate chips (about 9 oz.)
  • 2 Tbsp. unsalted butter, cut into ¼" pieces
