Ingredients
  • 2 cups water
  • ½ cup dark brown sugar
  • 1 cup kosher or sea salt
  • 2 tablespoons pink curing salt (see tip below)
  • 1 cinnamon stick
  • 1 tablespoon whole cloves
  • 1 tablespoon whole allspice berries
  • 1 tablespoon yellow mustard seeds
  • 1 teaspoon black peppercorns
  • ½ tsp ground ginger
  • 3 bay leaves, crumbled
  • 5 lbs beef brisket
  • 1 white onion, quartered
  • 2 large carrots, chopped
  • 2 ribs of celery, chopped

  • Pink curing salt is not essential but will give you the deli flavor you want and the bright pink color. It goes by other names such as Prague Powder, pink pickling salt, or sodium nitrate, and is available at specialty stores and online.
