Lentil Taco Meat (p207)

Ingredients
  • 4 cups water
  • 1 cup green lentils
  • 2 Tbsp diced white onion
  • 1 Tbsp olive oil
  • 2 Tbsp tomato paste
  • 1 tsp cumin
  • Salt and pepper, to taste
Steps
  1. Bring water to a boil in a medium saucepan. Add lentils and white onion. Return to a boil, then reduce heat, cover and simmer 30 to 40 min, until soft. Drain any excess water. Add remaining ingredients and use stick blender to blend about half.
  2. Serve on corn tortillas with fresh salsa (see recipe) and sliced lettuce
