Ingredients
  • 2 to 3 white onions (you can mix this up too and try red onions)
  • 2 tbsp salt
  • 2 cups white vinegar - you can also play around and try malt vinegar or apple cider vinegar for different flavours
  • ¼ cup white sugar
  • ½ tbsp pickling spice - store bought, or you could make your own (see note)
  • 1 to 2 glass jars around 750ml capacity - make sure they aren’t chipped; the lids aren’t plastic and there are no dents. These can be sterilised by running very hot, soapy water or simply running through the dishwasher
  • Salt and pepper for extra seasoning
