  • A few years ago I put together this recipe for my son's coffee shop. Today I adapted it to the Instant Pot using an "impossible" crust. Remember those?
  • PRESSURE POT ITALIAN SAUSAGE QUICHE
  • Impossible crust
  • 7” pan
  • subheading: Meat and Vegetable Filling:
  • ½ cup Italian sausage, sautéed per instructions below**
  • ½ cup shredded zucchini, skin on (twist in kitchen towel or paper towel to remove excess liquid)
  • ¼ cup sliced and chopped mushrooms
  • ¼ cup chopped Italian (Roma) tomatoes
  • 1 clove garlic crushed/diced
  • ¼ cup chopped onion - green, sweet, whatever
  • ½ T. fresh rosemary chopped
  • ½ tsp. Italian seasoning
  • ½ tsp. dried parsley
  • subheading: Custard:
  • 2 large eggs
  • ½ cup half and half
  • ¼ cup self-rising flour or biscuit mix
  • 1 cup shredded Provolone and Mozzarella (Sargento), or shredded mixed Italian cheeses
  • ¼ tsp. salt
  • ⅛ tsp. white pepper
  • Dash cayenne pepper
