Tofu Stir-Fry with Vegetables and Peanut Sauce
Ingredients
  • 2 tablespoons vegetable oil
  • 1 (14 oz) package extra firm tofu, drained, cut into 1-inch cubes
  • 2 cups roughly chopped cabbage, green or napa
  • 2 cups broccoli florets

  • Peanut Sauce
  • 1 tablespoon minced or grated ginger, from a 1-inch piece
  • 1 garlic clove, minced
  • ½ cup unsalted creamy peanut butter
  • ¼ cup low-sodium soy sauce or tamari
  • 2 tablespoons Chinese black vinegar or 3 tablespoons apple cider vinegar
  • 1 teaspoon chili sauce such as Sambal oelek or sriracha, plus more to taste
  • 2 tablespoons toasted sesame oil
  • 1 teaspoon honey, optional
