  • 8 large dried anchovies with the heads and guts removed
  • 8 cups water
  • 4 garlic cloves, minced
  • 4 ounces onion, sliced (about ½ cup)
  • 1 tablespoon (or more or less) gochu-garu (Korean hot pepper flakes)
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 2 teaspoons kosher salt (or more or less to your taste)
  • 2 to 3 green onions, sliced diagonally
  • 2 teaspoons toasted sesame oil
  • 2 to 3 tablespoons toasted sesame seeds, ground
