Mediterranean Chicken Thighs with Basmati Rice
Ingredients
  • 2 ½ pounds bone-in chicken thigh (about 6 thighs)
  • 1 ½ teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon smoked paprika
  • 1 teaspoon sweet paprika
  • ¾ teaspoon ground cinnamon
  • ⅛ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, halved and sliced
  • 1 orange bell pepper, seeded and sliced into thin strips
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 ½ cups uncooked basmati rice
  • 1 cup Swanson® Unsalted Chicken Stock
  • 1 can (10.5 ounces) Campbell’s® Condensed Cream of Chicken Soup
  • 10 cherry tomatoes, halved
  • 3 teaspoons chopped fresh parsley
  • 3 tablespoons chopped fresh cilantro
