Spiced Chickpea Tacos with Cilantro Pesto
Ingredients
  • subheading: Spiced Chickpeas:
  • 2 15-ounce/425g can chickpeas, rinsed and drained
  • 4 teaspoons Simply Nature Organic Extra Virgin Olive Oil
  • 1.5 teaspoon kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Pinch of cayenne pepper
  • Squeeze of lime juice
  • subheading: Cilantro Pesto:
  • 6 cups 36 to 40g loosely packed cilantro (leaves and tender stems, omit tough stems)
  • 0.67 cup 44g Simply Nature Roasted Cashews
  • 0.5 teaspoon garlic powder or 2 garlic cloves, roughly chopped
  • 2 small jalapeño pepper or ½ of a jalapeño pepper, cut in half
  • 4 to 6 tablespoons of freshly squeezed lime juice
  • 0.5 teaspoon kosher salt plus more to taste
  • Freshly cracked black pepper to taste
  • 8 to 10 tablespoons of Simply Nature Organic Extra Virgin Olive Oil
  • 2 to 6 tablespoons water only as needed

  • 12 corn tortillas I used La Tortilla Factory Tortillas, handmade style
  • 2 large avocado diced
  • Salsa of choice I used Simply Nature Organic Thick & Chunky Hot Salsa
