Irish Soda Bread
Ingredients
  • 3 ¼ c flour
  • ½ c sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 2 eggs beaten
  • 16 oz sour cream
  • 2 tsp caraway seeds
  • 1 cup raisins
Steps
  1. Mix dry ingredients, then fold in beaten eggs and sour cream. Stir in raisins and caraway seeds and mold into a round loaf.
  2. Grease a 9” round cake pan. Sprinkle loaf with flour and sugar…make a cross on top with a knife.
  3. Bake at 350°F for about an hour until the loaf is browned. Insert a knife in center to see if its done.
Notes
  • Here's my version for Irish Soda Bread. It's lighter, less dense and easy to make. Lower in sugar and less fat if you use low fat sour cream instead of buttermilk.
