Vegan Spinach and Mushroom White Lasagna
Ingredients
  • 2 Tablespoons Olive oil
  • 6 Cloves Garlic, chopped
  • 30 oz. Mushrooms, chopped very fine(I used cremini)
  • 16 oz. Frozen spinach, thawed and drained
  • ¼ Cup Balsamic vinegar
  • ¼ Cup Vegan butter, I used Earth Balance
  • ¼ Cup All purpose flour
  • 3 Cups Non-dairy milk, I used almond milk
  • ¼ Cup White wine, vegan
  • ¼ Cup Nutritional yeast
  • 1 teaspoon Garlic powder
  • Salt and pepper to taste
  • about 16 Lasagna pasta sheets, no-boil ( I used the 365 brand from Whole Foods)
  • Vegan Mozzarella for topping, optional
