Cauliflower, sweet potato and bacon soup
Ingredients
  • 1 head of cauliflower
  • 1 medium sized sweet potato
  • 1 brown onion, roughly chopped
  • 5 x pieces of short cut bacon
  • 1½L of chickens stock
Steps
  1. Throw all the veggies and bacon into the slow cooker
  2. Put in the chicken stock
  3. Cook on low for 8 hours low or 4 hours high
  4. Drain some of the liquid so it doesn’t become too liquidy
  5. Blitz everything with a stick blender and add 125ml of light cream and a good dash of Parmesan.
