Red Lentils and Tomato Soup
Ingredients
  • 150g red lentils
  • 600g grated carrots
  • one can chopped tomatoes
  • 125ml milk(or any milk replacement)
  • 500ml vegetable broth
  • one table spoon olive oil
  • chilli flakes and coriander seasoning
Steps
  1. Method: Place the spices in a hot pan for a minute then add the oil, lentils, carrots, tomatoes, broth and milk and bring to a boil, then let it simmer for 15 minutes. Use any sort of kitchen blender to make it smooth. Sprinkle some mixed seeds and spinach on-top. Served with Garlic Naan bread :) Sorry took so long to post!
