Saucy, Tangy Slow-Roast Sambal Salmon
Ingredients
  • 1½ lb. skin-on, boneless salmon fillet, scales removed
  • 3 Tbsp. vegetable oil, divided
  • 1 Tbsp. finely grated lime zest
  • 2 tsp. Diamond Crystal or 1¼ tsp.Morton kosher salt
  • 2 Tbsp. dark or light brown sugar
  • 2 Tbsp. sambal oelek
  • 2 tsp. cornstarch
  • 1 small white onion, cut through root end into ½"-thick wedges
  • 6 cloves garlic, finely chopped
  • 1 1" piece ginger, peeled, finely chopped
  • 1 large red bell pepper, halved, ribs and seeds removed, thinly sliced
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. toasted sesame oil
  • 2 scallions, thinly sliced
  • Cooked white rice or noodles (for serving)
