Ingredients
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons ground cinnamon, divided
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup unsweetened applesauce
  • ⅓ cup coconut oil, melted and slightly cooled (can use vegetable oil)
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups shredded zucchini*
  • 1 cup peeled & chopped apples, I use Granny smith or Honeycrisp
  • 2 tablespoons turbinado sugar, divided
