South American Avocado and Quinoa Salad
Ingredients
  • 1 ½ cups dry quinoa (soak overnight for best texture once cooked)
  • 1 small red onion, finely chopped
  • 1 T olive oil
  • 1 T lemon juice
  • 2 T white wine vinegar
  • ½ t chili powder (you can also use finely chopped fresh chilis)
  • ½ t ground cumin
  • sea salt to taste
  • ½ cup fresh parsley, finely chopped
  • 2 ripe avocados, sliced thin
