Vanilla Rice Pudding
Ingredients
  • 3 ½ ounces (½ cup; 100 g)  sugar
  • ½ vanilla bean, split and seeds scraped (see note)
  • 4 cups ( 950 ml) whole milk, plus extra to adjust consistency (see note)
  • 7 ounces (1 ⅓ cups; 200 g) cooked long- or medium-grain white rice
  • ¼ teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
