Easy Weeknight Chili

Ingredients
  • 2 TB vegetable oil
  • 1 onion, chopped fine
  • 2 TB chili powder
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • Salt and pepper
  • 1 (28 oz) can crushed tomatoes
  • 1 c chicken broth
  • 2 (15 oz) cans kidneys beans, rinsed
Steps
  1. Heat oil in pressure cooker pot on sauté,
  2. Add onion and cook until softened, about 3 minutes.
  3. Stir in chili powder, garlic, cumin, and ½ tsp salt and cook until fragrant, about 1 minute.
  4. Add beef and cook, about 4 minutes.
  5. Cook for 10 minutes on medium pressure.
  6. Do quick release.
  7. Stir in beans and simmer about 15 minutes until hot. Season with salt and pepper.
Notes
  • Use directions with caution. Original was not for an electric pressure cooker.
