Making Food Monday
Ingredients
  • 3 lbs chicken
  • 2 to 3 tbs coconut oil
  • 2 tsp garlic
  • 1 can fire roasted diced tomatoes
  • 2 tsp salt
  • 1 tsp white pepper
  • 2 tsp turmeric
  • 2 tbsp curry powder
  • 2 cans coconut milk
Steps
  1. Add coconut oil to pot and sauté garlic for a minute.
  2. Add tomatoes, pepper, turmeric, salt and curry powder. Stir to combine all flavors.
  3. Add both cans of coconut milk (stir before pouring into pot). Stir well to combine.
  4. Add chicken (can be frozen) into pot, pushing down into sauce.
  5. Seal pot. Cook for 8 mins. Serve over rice.
