Mom's Chili
Ingredients
  • 2lbs Ground Beef
  • 1 Onion Finely Chopped
  • 2 Celery Stalks Finely Chopped
  • 1 28 oz. Can of Fire Roasted Tomatoes
  • 1 Can of Kidney Beans (drained)
  • 1 Can of Black Beans (drained)
  • 1 bottle/can of Dark Beer (lager can be used too)
  • 1 Tbsp Chili Powder
  • 1 Tsp Coriander
  • ½ Tsp Cocoa
  • Ancho Chili Powder to taste
  • Chipotle Chili Powder to taste
  • Salt and Pepper to taste
Steps
  1. Brown the beef and drain. Saute the onion and celery till tender. Add beef back to the pot.
  2. Add the crushed tomatoes, beer and pureed beans along with the seasonings. Let simmer
  3. about 15 min and taste adjust seasonings to your liking. Simmer for about another 15 to 20 minutes.
  4. Garnish with shredded cheese, sour cream, jalapeños, hot sauce, cilantro…etc
