Creamy Pasta Pomodoro with Mozzarella Di Bufala

  • 200 to 250 g (7 to 8 ¾ oz) of spaghetti (or pasta of choice), cooked al dente
  • olive oil
  • 1 to 2 spring onion, chopped
  • 1 clove of garlic, minced or chopped
  • pinch of brown sugar
  • 1 small chili, chopped
  • 4 big tomatoes, peeled and chopped
  • 400 g (14 oz) of homemade tomato passata
  • 200 ml (6 ¾ fl oz) heavy cream
  • salt and pepper
  • pinch of cumin, smoked paprika, oregano, basil
  • 2 to 3 Tbsp. salted butter
  • parmesan cheese, grated
  • cherry tomatoes, halved
  • Mozzarella Di Bufala
  • fresh basil leaves
