New Orleans Vegetarian Red Beans and Rice

  • 1 large green pepper, diced
  • 2 stalks of celery, diced
  • 2 large cloves of garlic, minced
  • 2 teaspoons smoked paprika
  • 2 teaspoons salt-free creole seasoning
  • 2 teaspoons soy sauce or tamari
  • 1 teaspoon hot sauce, plus more to taste

  • 2 cups of jasmine or long grained brown rice
  • 2 tablespoons of butter
  • 1 bay leaf
  • Salt
