Quick Bean and Rice Burritos
Ingredients
  • 1-½ cups water
  • 1-½ cups uncooked instant brown rice
  • 1 tablespoon olive oil
  • 1 medium green pepper, diced
  • ½ cup chopped onion
  • 1 teaspoon minced garlic
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ⅛ teaspoon crushed red pepper flakes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup salsa
  • 10 flour tortillas (8 inches), warmed
  • Optional: Avocado slices, lime wedges, vegan sour cream and salsa
