Wisconsin Cauliflower Cheddar Soup
Ingredients
  • 3 tablespoons butter
  • 2 shallots, 2 leeks, or a combination
  • ¼ cup flour
  • 2 Cup half and half
  • 4 cups chicken stock
  • One 10.5 ounce can Cream of Chicken
  • One large cauliflower chopped into small pieces
  • 6 to 8 ounces sharp cheddar cheese
  • 2 ounces Swiss cheese
  • ½ teaspoon salt
  • 1 teaspoon dried mustard
  • ½ teaspoons ground white pepper
