Lupin Stir-Fry
Ingredients
  • ½ cup ground lupin bean, dry
  • 2 tsp coconut oil
  • ¼ cup shredded red cabbage
  • ¼ cup, chopped fresh mushrooms
  • ¼ cup, florets broccoli
  • ¼ cup, chopped sugar snap peas
  • ¼ cup, chopped carrots
  • 2 large eggs
  • 1 pinch , or to taste salt
  • 1 pinch, or to taste pepper
  • 1 tsp, soy sauce
  • 2 tsp sesame seeds
Steps
  1. In a medium saucepan, bring 1 ½ quarts of water to a boil.
  2. Stir in ground lupin and an optional pinch of salt; boil 3 minutes. Strain; set aside.
  3. Set a large skillet over medium heat. When hot, add oil and vegetables. Cook, stirring frequently, until vegetables are tender and lightly browned, 3 to 5 minutes.
  4. Add cooled lupin to vegetables and mix.
  5. Create two large spaces in vegetables in skillet; crack an egg into each opening.
  6. Scramble eggs, mixing them into the vegetables, until cooked through, 1 to 2 minutes.
  7. Season to taste with salt, pepper, and soy sauce. Garnish with sesame seeds.
